Growing My Own Kamote

I got two kamote pieces at the grocery and promptly forgot to cook it. I left it in the counter and just opened the container. 

Few weeks later, it started to grow roots and leaves. The boys eventually gave me an ultimatum, plant it or throw it out.

I decided to plant it. My goal was to have leaves in case I want to make sinigang. It been almost three weeks and the tiny leaves have grown. I can actually make sinigang in a few days!

I'm sure the leaves will just continue to grow, so I'll just leave it in the pot. Woohoo!
